Carrots soup with ginger and honey
You need:
- 12 medium carrots
- 1 yellow onion
- 2 garlic cloves
- 2 tbsp unsalted butter
- 2 tbsp extra-virgin olive oil
- 4 cups water
- 2 tsp grated fresh ginger
- Salt
- 3 tbsp Honey
Cooking Time: 1 hour. Serves: 4
How to prepare:
Peel and cut the carrots, onion, and garlic. In a heavy bottom, pot sautes the onion in the butter and olive oil over medium heat, stirring, until translucent. Add garlic, saute it and add water carrots, ginger, and salt and cook until the carrots are very tender about 45 minutes. Let this cool. After cooling take a blender and blend the soup in portions. Once done put everything in the pot and now boil it till it becomes thick and gets a good consistency. Add the honey, stirring until dissolved. Taste, adjust the seasonings, if necessary, and serve immediately.
