Chocolate Cinnamon Muffins
You can prepare muffins for breakfast, snacks or dinner.
- 1 2/3cup – all-purpose flour
- 1 t.- baking powder
- 1 t.- baking soda
- 1/2 t.- salt
- 1 t.- cinnamon
- 1 – egg
- 1/2 cup – honey
- 1/2 cup – milk
- 1/3 cup – vegetable oil
- 1 1/2 t. – vanilla extract
- 1 1/2 cups – dark chocolate (70% cacao) cut up into cubes
Cooking Time: 1/2 hour. Serves: 12

Line a cupcake pan with 12 liners. Preheat the oven to 350 degrees.
In a mixing bowl, whisk together all-purpose flours, baking powder, baking soda, salt, and cinnamon. In another bowl, whisk together the egg, honey, milk, oil, and vanilla extract. Add this mixture to the flour mixture and stir gently until combined.
Add the chocolate cubes to the bowl and fold them in.
Bake in the preheated oven for 20 -22 minutes or until a toothpick inserted in the center comes out clean.
